200ml fresh lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, to serve 10)

Whole cranberries, as a garnish
Mandarin essential oil, to finish

For the Syrup: Combine all the components into a pan, bring to a simmer, agitating until the sugar dissolves. Next, turn off the heat and leave to cool completely. Transfer into an sealable bottle, close it keeping it chilled, it will last for up to a month.

Preparing the Cocktail Base: Mix the specified liquid ingredients into one big jug, allow it to infuse for an hour, then strain best through muslin, to ensure it's perfectly clear.

For serving: Pour 85ml from the batch mix into your mixing glass packed with ice, gently stirring carefully for about 60 seconds to chill. Strain into a chilled martini glass or equivalent, top with a few cranberries adding the final touch with a quick spritz of mandarin oil over the top.
